Monday I'll be back to work, and so I thought I would put this up today. I've had a good week off. At times it feels longer, until now, when it feels really short. But that's okay. Tomorrow I make time and a half. At least that's worth my while. I've been working on my third book, almost finished. I need to get back to work on that. Today was a little busy in the morning, and so I haven't been able to get to this like I wanted to, but that's okay. I made a broccoli salad that has become our favorite for summer. Now you may have had some version of this, even from the deli, but this came directly from from The White Pines Inn. We thought that it was good, except they put way too much sugar in it. So, I thought I would pay it forward and give you our healthier version.
2 small heads of broccoli - Florets, cut into bite size pieces
2 large slices red onion - chopped (red gives it color, but any will do)
3-4 slices turkey bacon, cooked & crumbled
1/2 c. Sharp cheddar cheese - shredded or cubed
1/2 c. mayo -- which ever brand you like, we prefer Miracle Whip because it has no high corn sweeteners in it.
1 1/2 T. vinegar
1 T. sugar ( or to taste)
I mix the wet ingredients and sugar into the broccoli florets and begin adding each thing while stirring and mixing. (Love to crumble the baccon in). Like any salad you will have to decide how much mayo you want, and if you like pepper, go for it. I know a number of times I've seen it with raisins in it, but that's up to you, if you like to add anything else to it, like Mandarin oranges or something crazy like that.
